Lime Cilantro Sweet Potatoes recipe

On Smittenkitchen.com, one of my favorite cooking websites, Deb wrote today about how she rarely repeats recipes, but once in a while happens upon one she can't help but make over and over again. I am the exact same way! Immediately I thought of my black bean & avocado quinoa recipe which I've made several times. But recently, I've been all about this lime cilantro sweet potatoes recipe adapted from Gourmet. It is amazing, healthy, and easy. I am OB-sessed!
The only negative? It's so good, it often upstages other things it's served with. So here, I coupled it with a veggie burger on whole wheat. In the photo all the way at the end of this entry, I served it with a cucumber salad and some szechuan tofu. I think it'd be nice with a rotisserie chicken, as well.

Lime Cilantro Sweet Potatoes

2 lb sweet potatoes, peeled and cut into 3/4-inch pieces
3 tablespoons extra-virgin olive oil
3/4 teaspoon salt
1/4 teaspoon cayenne
1 tablespoon fresh lime juice
1/4 cup chopped fresh cilantro

Preheat oven to 425°F.

Toss sweet potatoes with 2 tablespoons oil and 1/4 teaspoon salt in a shallow baking pan.
Arrange potatoes in 1 layer and roast, stirring halfway through roasting, until tender, about 25 minutes total. Stir together cayenne and remaining 1/2 teaspoon salt in a small bowl. Whisk together lime juice and remaining tablespoon oil in a medium bowl.Add potatoes. Sprinkle with cayenne mixture and cilantro, and stir gently to combine.

These are super simple! You must try them if you like sweet potatoes.
