I like this quote from Amy Traverso's article on Todd English in the April issue of Boston magazine. (It's a great article, by the way; check it out here).

The quote I speak of is from Alan Richman, a restaurant critic:

"People like me who have never worked in a restaurant, we're entranced by the romance of something that isn't romantic. We're like people who watch the ballet and see the beautiful ballerinas and don't see the bloody feet."


What an eloquent way to sum up the strange allure of the restaurant business.
